Zucchini

Ingredients:
- vegetable shortening
- 1 cup of sugar
- ½
cup of vegetable oil
- 2 eggs
- 1 teaspoon of vanilla extract
- 1½
cups of all-purpose flour
- ½
teaspoon of salt
- ½
teaspoon of baking soda
- 1 teaspoon of cinnamon
- 1 cup of grated, unpeeled
zucchini
- ¼
cup of chopped walnuts (optional)
- ¼
cup of raisins (optional)

How
to make it:

Preheat the oven to 350 degrees.

Use vegetable shortening to coat
the bottom and sides of a 9-inch loaf pan.

Mix sugar, vegetable oil, eggs,
and vanilla in a mixing bowl until fluffy.

Add flour, salt, baking soda, and cinnamon. Stir until blended.

Stir in zucchini. Add walnuts and raisins, if you wish.

Pour the mixture into the prepared loaf pan, and bake for 1 hour or until a toothpick inserted into the center of the loaf comes out clean.
